Study in Japan
Experience Japan through the lens of food! Travelers will visit the markets and restaurants of modern Tokyo, explore the agricultural production of the mountains and rice fields in the Yamagata region, and learn about the Japanese traditions of koji fermentation to make soy sauce and miso and iron working to create some of the world’s finest chef’s knives in Kyoto. In each city, students will have opportunities to learn from and participate with masters of their craft and throughout the trip, travelers will meet people working at every level of the food system.
The itinerary was developed in conjunction with partners from the Japanese Ministry of Agriculture, Forestry, and Fisheries and offers experiences that would be difficult for the average traveler to arrange. The class will have access to farms, manufacturing facilities, and artisans which is a unique learning opportunity.
As a class, we will spend our time before the trip learning about the history, culture, and food ways of Japan. We will focus on how geography, climate, and politics have shaped the Japanese food system. This prior course work will inform the student experience on the trip by giving context and a deeper understanding.
